THE BEST Stuffed Peppers Ever

My family LOVES stuffed peppers and the best thing is you can make them out of basically whatever you have on hand! BUT THESE, these are the go to Peppers in our house 😍 You will not be disappointed!

Ingredients:

6 large Bell Peppers ( I prefer a mix of orange, red and green)

1 lb Ground beef (I use elk or venison)

1⁄2 cup onion, Chopped

1/2 can tomato paste

3 fresh tomatoes, diced

1 cup rice of your choice (I prefer brown or jasmine) **Busy mom tip: I cook my rice in the instant pot the day before

1 cup water (for cooking rice)

1 teaspoon pink Himalayan sea salt

1 tbsp garlic powder

1 teaspoon Worcestershire sauce

1 cup Mexican cheese blend, Shredded

Directions:

Cut off the tops of peppers; discard seeds and membranes, chop peppers in half length wise.

Cook the whole green peppers, uncovered in boiling water for about 5 minutes; invert to drain well.

*in a separate pot put water bring to boil add rice cook until rice is soft – unless using precooked rice like I do.

In a skillet cook ground beef, onion till meat is browned and onions are tender.

Add tomatoes, paste, salt, garlic powder, Worcestershire, and rice.

if needed add more water.

add rice to beef mixture.

Stir in cheese. Stuff peppers with meat/rice mixture. Place in a baking dish or on a cookie sheet lined with foil.

Bake, covered in a 350 degree oven for 30 minutes. in the last 5 minutes add any remaining cheese to the top of the peppers.

And ENJOY! Because these are amazing!!!

Crustless Pizza – Low Carb Heaven

Okay guys tonight’s dinner was REVOLUTIONARY ❤️❤️❤️❤️ I’ve tried cauliflower crust (it’s okay 👌🏼) whole wheat crust (I love it) BUT tonight I made crustless pizza! And Ohhhhh Emmm Geee you guys, this is a winner 🙌🏼🙌🏼🙌🏼

  • 1/2 cup mozzarella cheese, shredded
  • 1 serving (about 17) Turkey pepperoni
  • Oregano to taste 😉

    So simple:

  • spread the cheese over the bottom of a pan over medium heat.
  • Top with pepperoni (or other toppings of choice)
  • Sprinkle with oregano
  • Cook over medium until edges are golden brown and cheese is cooked through.
  • Slide off pan, allow to cool and harden a bit.
  • Serve with marinara 🙌🏼🙌🏼🙌🏼

Taco Boat Throwdown

Tonight was one of those "okay how do we throw something together fast, without going grocery shopping?" Kinda nights 😳
So was born our zucchini taco boats 😍😍😍

Ingredients:

  • 2 whole zucchini
  • 1 lb lean ground beef (I used ground elk)
  • 1 whole onion -diced
  • 2 bell peppers OR 2 cups baby sweet peppers -diced
  • 1 can black beans
  • 1 can corn
  • 1 avocado (or guacamole)
  • Shredded lettuce
  • Shredded cheese
  • Salsa
  • My sodium free taco seasoning
  • 1tbsp water
  • Nonstick cooking spray
  • Pink Himalayan Sea Salt
  • Pepper
  • Saran Wrap
  • Olive oil

*optional
For the family 😉 1 box jiffy cornbread mix and it's ingredients

Directions:

  • Brown the meat in large skillet
  • Once almost completely browned add water and taco seasoning to taste
  • Slice zucchini in half lengthwise, do not cut completely through but almost
  • Spray small amount of non stick cooking
  • spray in the middle of the zucchini
  • Sprinkle with salt and pepper
  • Wrap with Saran Wrap and microwave 5 minutes, then let it stand 2 minutes
  • Do the same to the other zucchini
  • Add a small amount of oil to the pan with the meat moved to the side
  • Add onion and peppers leaving 1/2 cup raw for topping
  • Cooking onion and peppers and blend with taco meat and turn off heat
  • Mix corn and black beans in microwave safe bowl and cover and microwave on high 2 minutes
  • Open Saran wrapped zucchini and *optional : scoop out center (I prefer to leave the center in
  • Top with meat mixture, lettuce, peppers, salsa, cheese, bean and corn mixture and salsa

*Optional Corn Bread Base for non-zucchini lovers

  • Follow directions on jiffy box to mix pancakes
  • Heat griddle and make corn bread pancakes 🥞
  • Top exactly the same as the zucchini boats

These were a hit by all and so fast and simple and most importantly, you don't need your oven on a hot summer day!

Oven Nachos – Fix Approved

If your kiddos are anything like mine they are CONSTANTLY asking for food. As if I don’t feed them? As if they didn’t just eat an apple, a sandwich, a bowl of cereal, a string cheese, 5 strawberries and about 15 other things…as if.

Well, this afternoon they were begging (literally begging) me for something MORE to eat! ……I of course said “drink a glass of water and wait 5 minutes” I mean, I don’t want to raise over-eaters but I also don’t want to not feed a hungry child! So while they waited their 5 minutes, I glanced at the clock… It was 525pm!  And I don’t know about you, but if I haven’t started dinner, let alone started thinking about dinner, yet at 525pm, all may as well be lost and we can call our very favorite delivery kid from the friendly neighborhood Bellagios or we can expect to pull all our hair out dealing with starving children who somehow morph into an angry pack of screaming wolves if dinner is served after 630pm!

So I had to think quick to avoid the slippery slope that is take out, not to mention the poor kids were totally right to be hungry, it was dinner time!

Open the freezer, HAAAALELUJAH! Ground Turkey to save the day…and the rest is history 😉

Oven Nachos are the quickest, healthiest, tastiest most incredible thing I have up my sleeve. All you need is:

  • 1.5 lbs Ground beef
  • 1 Serving of my salt and sugar free Taco Seasoning
  • 1 can of Organic Black Beans
  • 1 Cup Shredded Cheese of your choice (I use mexican blend)
  • Shredded Lettuce
  • 2-3 Diced Tomatoes
  • 1 Diced Onion
  • 1 Diced Avocado
  • 1 small can Sliced Olives (for the kids 😉 )
  • Greek Yogurt or Sour Cream
  • Tortilla Chips (I use whole grain chips from Costco)

Step 1:

Preheat the oven to 375*

Step 2:

Brown the ground turkey in a skillet, add taco seasoning and cook through. Add half the diced onion to the meat and simmer for 3 minutes.

Step 3:

Spread the can of black beans over the bottom of your oven safe casserole dish

Step 4:

Top the beans with the cooked meat

Step 5:

Top with Cheese

Step 6:

Place on middle rack of oven for 12 minutes or until cheese is melted

Step 7:

While cooking, dice up veggies

Step 8:

Upon removing from the oven, top with lettuce, tomatoes, onion, avocado, and olives

Serve while hot with greek yogurt/sour cream and tortilla chips!

 

Enjoy and repeat often!

 

Spread Joy, Stop Hate

My heart is breaking for the state of our country and the lives that are continuously lost on our soil in addition to all the lives out on the line and lost to fight for our freedom. We are blessed and surrounded with strong and brave men and women who fight for us to be able to go to movies, schools and dance clubs and live our lives safely and independently…yet there are terrible acts of hate taking place right here in our towns, Trying to push us into fear and doubt and submission. We can lock up our guns, we can ban them from the market, we can bar our windows and add metal detectors and give away the freedoms that those brave men and women are so selflessly fighting FOR. That might work for a while, it might make a dent, or it might not, it WILL push the hateful people to new means of harming others and to the black market (which is where most of their weapons are purchased illegally anyway) , it WILL take away decent people’s rights to protect themselves and others, It WILL instill a sense of distrust in our government and their ability to fairly protect us without taking away our rights, and it WILL NOT stop HATE. I am not saying I know what the “right” answer is, I am not saying I 100% agree we shouldn’t adjust some laws and regulations. What we should do: we should choose to spread joy, lead with love, and teach respect, responsibility and safety to our youth. We should speak with kindness to ALL people types at ALL times, we should show compassion and acceptance and humanity to all those who cross our path. WE are raising the generation who will run this country into the ground or out of it…We have the power to fight hate but the strongest weapon we have is not a gun or a bomb, it’s our words and our actions. Do not tolerate bullying, teasing, violence, foul speech or exclusion or others. Teach joy, love, kindness and acceptance, fight against making more monsters and towards making more heroes. People turn to hate and destruction out of fear and exclusion, don’t be a part of creating that environment. Be a part of eliminating it. I am not so naive to say that joy & love can fix all our problems, but they can lead us in the direction we need to go.

Apple Sausage Heaven in a Pan

Sometimes you just need a good wholesome comfort food on a rainy day… This one pan Apple Sausage dish is heavenly and perfect, and a treat the whole family can enjoy!

 

Here’s what you will need:

1 tablespoon olive oil
1 pound chicken apple sausage (brats, or your other favorite low sodium sausage can easily work 😉), sliced
1 large onion, chopped
3 cloves of garlic, minced
1 apple, chopped
3 cups low sodium chicken broth
1 (14.5 oz) can of tomatoes with green chilies
1/3 cup almond milk
10 ounces pasta (I used whole grain penne.)
salt and pepper to taste
1/2 cup blend of Monterey Jack cheese, mozzarella and Parmesan or and 1 of the 3, shredded

In a large skillet, add olive oil and set the temperature to medium high heat. Add in the onions and sausage and cook for about 5 minutes until brown. Then, put in the garlic and apples, cooking for about another minute.

Next, add the chicken broth, canned tomatoes, almond milk, pasta, salt, and pepper. Stir to combine. Bring the mixture to a boil stirring until past is fully cooked.

Eeduce heat to low, add cheese to the pasta. Stir to combine.

Serve up, dish up and enjoy, because you may not have many leftovers! 😉

 This is one of those moments for me.

 When I first ventured into the Coaching world a few years ago I never would have thought that I could be sitting here LITERALLY CHANGING LIVES. Just by being me. Just by reaching out, leaving fear at the gates and sprinting towards what I want out of life.  What do you want out of life? Sick of Being Sick

It is crazy to think back on my life over the past few years and remember how sick I was ALL THE TIME!  The health and wellness battles I faced, the exhaustion, the BIG SCARY DISEASES that were discussed, the illness of my youngest daughter and my downright depression at times —It all feels a little like a different life now, a movie or a horrible book with a depressing ending.

It sure as heck doesn’t feel like my life!

I am a different person today, still a mommy, a wife, a sister, a friend, a family member and so much more…but one thing I am today has changed and I owe my life to it…I am a Health and Fitness Coach and that is because of my raw passion for fitness, health and wellness.  I have seen FIRST HAND how nutrition, health, and fitness can drastically alter the course of your life.  I have seen how drinking my daily superfoods treats my GI issues, treats my daughters illnesses, gives me energy and treats my immune deficiencies…it all stems from what I am putting in my system, from what you are putting YOUR system.

It sounds crazy right?  Like, there can’t actually be such an easy answer to all our health issues… well maybe it is crazy, but it is working!  I focus on eating minimally processed foods as much as I can, getting my daily dose of dense nutrition, and working out for about 30 minutes each day.  That is it.

There is no miracle pill, no quick fix that will change your health and increase your passion for life…

Can you find a pill that might help you drop 10 lbs?

Definitely.

But it will also eat away at your system, cause future defects in your health (I know from in depth personal experience) and it won’t last, it won’t make you healthy…it won’t change your life.

Only taking your health into your own hands, being ready to work hard on learning how to feed your system and your soul at the same time, and getting the proper support to do so will change your life and your health! Make yourself a priority, make your future a priority and make your life a priority.

As I see it you have a few options:

You can decide you are ready to get healthy and focus on changing your life.

You can contact me for FREE help and get started on your journey to success.

You can continue searching for a miracle cure that isn’t coming.

You can do nothing and keep battling yourself and your immune system.

The choice is yours, all I know is I am so glad I made the choice to put myself first because without it, I would probably be even sicker this year than last and medicated instead of pain free and energized and helping others get there too!
