THE BEST Stuffed Peppers Ever

My family LOVES stuffed peppers and the best thing is you can make them out of basically whatever you have on hand! BUT THESE, these are the go to Peppers in our house 😍 You will not be disappointed!

Ingredients:

6 large Bell Peppers ( I prefer a mix of orange, red and green)

1 lb Ground beef (I use elk or venison)

1⁄2 cup onion, Chopped

1/2 can tomato paste

3 fresh tomatoes, diced

1 cup rice of your choice (I prefer brown or jasmine) **Busy mom tip: I cook my rice in the instant pot the day before

1 cup water (for cooking rice)

1 teaspoon pink Himalayan sea salt

1 tbsp garlic powder

1 teaspoon Worcestershire sauce

1 cup Mexican cheese blend, Shredded

Directions:

Cut off the tops of peppers; discard seeds and membranes, chop peppers in half length wise.

Cook the whole green peppers, uncovered in boiling water for about 5 minutes; invert to drain well.

*in a separate pot put water bring to boil add rice cook until rice is soft – unless using precooked rice like I do.

In a skillet cook ground beef, onion till meat is browned and onions are tender.

Add tomatoes, paste, salt, garlic powder, Worcestershire, and rice.

if needed add more water.

add rice to beef mixture.

Stir in cheese. Stuff peppers with meat/rice mixture. Place in a baking dish or on a cookie sheet lined with foil.

Bake, covered in a 350 degree oven for 30 minutes. in the last 5 minutes add any remaining cheese to the top of the peppers.

And ENJOY! Because these are amazing!!!

Crustless Pizza – Low Carb Heaven

Okay guys tonight’s dinner was REVOLUTIONARY ❤️❤️❤️❤️ I’ve tried cauliflower crust (it’s okay 👌🏼) whole wheat crust (I love it) BUT tonight I made crustless pizza! And Ohhhhh Emmm Geee you guys, this is a winner 🙌🏼🙌🏼🙌🏼

  • 1/2 cup mozzarella cheese, shredded
  • 1 serving (about 17) Turkey pepperoni
  • Oregano to taste 😉

    So simple:

  • spread the cheese over the bottom of a pan over medium heat.
  • Top with pepperoni (or other toppings of choice)
  • Sprinkle with oregano
  • Cook over medium until edges are golden brown and cheese is cooked through.
  • Slide off pan, allow to cool and harden a bit.
  • Serve with marinara 🙌🏼🙌🏼🙌🏼

Taco Boat Throwdown

Tonight was one of those "okay how do we throw something together fast, without going grocery shopping?" Kinda nights 😳
So was born our zucchini taco boats 😍😍😍

Ingredients:

  • 2 whole zucchini
  • 1 lb lean ground beef (I used ground elk)
  • 1 whole onion -diced
  • 2 bell peppers OR 2 cups baby sweet peppers -diced
  • 1 can black beans
  • 1 can corn
  • 1 avocado (or guacamole)
  • Shredded lettuce
  • Shredded cheese
  • Salsa
  • My sodium free taco seasoning
  • 1tbsp water
  • Nonstick cooking spray
  • Pink Himalayan Sea Salt
  • Pepper
  • Saran Wrap
  • Olive oil

*optional
For the family 😉 1 box jiffy cornbread mix and it's ingredients

Directions:

  • Brown the meat in large skillet
  • Once almost completely browned add water and taco seasoning to taste
  • Slice zucchini in half lengthwise, do not cut completely through but almost
  • Spray small amount of non stick cooking
  • spray in the middle of the zucchini
  • Sprinkle with salt and pepper
  • Wrap with Saran Wrap and microwave 5 minutes, then let it stand 2 minutes
  • Do the same to the other zucchini
  • Add a small amount of oil to the pan with the meat moved to the side
  • Add onion and peppers leaving 1/2 cup raw for topping
  • Cooking onion and peppers and blend with taco meat and turn off heat
  • Mix corn and black beans in microwave safe bowl and cover and microwave on high 2 minutes
  • Open Saran wrapped zucchini and *optional : scoop out center (I prefer to leave the center in
  • Top with meat mixture, lettuce, peppers, salsa, cheese, bean and corn mixture and salsa

*Optional Corn Bread Base for non-zucchini lovers

  • Follow directions on jiffy box to mix pancakes
  • Heat griddle and make corn bread pancakes 🥞
  • Top exactly the same as the zucchini boats

These were a hit by all and so fast and simple and most importantly, you don't need your oven on a hot summer day!

Ground Beef Quinoa Bowl

Oh you guys 😍😍😍 Dinner tonight, softball night 🙃 Needed to be Fast and made up of ONLY the complete randomness that is available in my empty pantry and fridge 😳 End of Month for me and HUGE shift in Ty’s work schedule, paired with softball games = no time for groceries or cooking 🤷🏼‍♀️ so THIS beauty was born 😍….

Ground Beef Quinoa Bowl ❤️ 

You could make it with ANYTHING you have on hand, here is the exact deliciousness I created 👌🏼 

-1 lb ground elk (any ground turkey/beef would do)

  Brown meat with my no sodium taco seasoning 

– 1 bag stir fry veggies (peas, broccoli, carrots and add a diced onion)

  Grilled in dry pan and evoo until perfect

– 1-2 sweet potatoes diced and THIS is the MOST important trick I think I learned tonight! Do you love sweet potatoes or yams? Me to 😍 but when it is hot I hate using my oven to grill them! So here’s what I did and it worked perfect 👌🏼

  • – dice 1 or 2 sweet potatoes
  • – throw in a micro safe bowl
  • – toss in 1 tbsp evoo
  • – cover
  • – micro 2 minutes
  • – stir
  • – micro 1 more minute or until softening
  • – dump them into your frying pan and add 1/2 more tbsp more evoo, dash of pink Himalayan sea salt and any other salt free seasoning you like 😉
  • – cook over medium high heat, flipping and stirring regularly, until browned and crispy 🙌🏼🙌🏼 Literally the best and fastest “grilled” sweet potatoes EVER!

– 1 cup organic quinoa

  Bring to a boil in 2 cups water and add 1 tsp “better than boullion” chicken flavor, cover and reduce to simmer for 15 minutes and fluff with fork

– diced tomato

– diced sweet baby peppers

– diced avocado

– diced red onion
Add all the toppings to a bowl and mix up, I added a little salsa too! Sooo yummy and a perfect FAST weeknight meal and you really could use whatever you have on hand 😘

As I laid in bed this morning listening to these little voices build and imagine and play in the hallway together, just to be near where I am ❤️ I was overcome with total gratitude for this amazing gift of motherhood and stewardship of these tiny hearts, hands and feet They absorb every breath I breathe, every thought I think and every word I speak.

They long to be near us always, in the quiet moments and in the crazy ones.

They watch us, watch ourselves in the mirror and learn how to think and talk about their own bodies.

They watch us show kindness to strangers and learn to be kind, always and to everyone.

They watch us love our husbands, their daddy and hero, and watch him love us, and learn what a healthy and strong marriage should look like and what they can expect from a man.

They watch us praise the Lord and sing to Him, read of Him and act as He would approve, and they learn to love Him.

They listen as We lift others up, speak acceptance and love into their lives, and they learn to pour their hearts into others, to be empathetic.

They watch and listen as we contain, or try our hardest to contain 😉, our temper, our anxiety, our depression, and learn to be strong and steadfast and a fighter-despite their weaknesses.

They watch us fall to our knees and depend on Him for our strength, and learn to be arrows, to turn to Him in times of need.

So I will keep sharing my weaknesses and my fight, so they can see where I draw my strength ❤ And I urge you to share yours too, continue to lead by example and we need to remember as mommas, that even when we think they aren’t watching and maybe think we aren’t leading, they are, we are, always.

Makeup Free Monday – Take that Anxiety!

**⚠️ Raw Post** Makeup free Monday! Before I embarked on this journey to self love and a healthier happier version of me YOU WOULD NOT catch me without mascara on, usually foundation and gloss too BARE MINIMUM… most days it was full face makeup from morning to night, it was so important to me to not be seen without my makeup that I would do it while driving even 😱 or before I would get out of bed when staying with friends or with house guests, before leaving the tent in the morning while camping…I didn’t want anyone to actually see ME. Now don’t get me wrong, I still LOVE makeup and using it and getting all dolled up, probably more than the next gal 😉 BUT I wasn’t using it to get “dolled up” or even to get ready for the day…I was using it as a mask, to cover years of acne, internal anxiety and depression and a whole heck of a lot of self doubt and loathing. My plan was to present a put together sunny face so people wouldn’t be tempted to look too much deeper and see all the jagged, broken, not so pretty pieces inside 💔 And it was working pretty well at keeping people at bay, even the people closest to me had no idea what I was struggling with, and for some of them this may be the first time they learn of it. But anxiety and depression had their claws in me and there were days I wouldn’t even look in mirrors, I literally would brag about being able to do my makeup without looking in a mirror but the only reason I knew how to do that was because I hated looking at myself so much that I would refuse to do it, but I wasn’t willing to sacrifice my “mask” of makeup so I learned how to do it without my reflection, because I couldn’t trust my refection, it had led me astray before and I just knew it was lying to me every time I thought I looked okay or had a semi-positive thought about myself.
There are so many reasons I thought I was broken, unworthy, “ugly” and most of them start from my earliest memories of being teased at school and have been “compound fractures” of my self esteem through years of anxiety and people pleasing… BTW if you haven’t figured it out yet, you can’t find self worth in pleasing others 😉 If someone could have shared that with me 20 years ago my journey would look a lot different. Self worth comes from exactly where it says it does, yourself! And you get there by working on YOU not by pleasing others, over achieving or “looking” put together. You get there by shining light on the broken, dark and HARD as fuck to look at crap in your baggage and calling it out and taking its power away! You get there by finding a way to love yourself in spite of and even in thanks to, your struggles and pain. You get there by recognizing you want more for yourself and being willing to work hard to get it! These are not easy things, and in some cases they feel downright impossible BUT I promise you that once you decide you are worth it, once YOU DECIDE to find a way to work towards healing your wounds, once YOU DECIDE to own all your pieces, broken or whole, YOU HAVE THE POWER TO BE YOUR TRUE SELF and that true self is beautiful with broken edges that have been soldered back together and jagged pieces that are sharp but stunning when the sunlight hits them, like a stained glass window made of a thousand tiny pieces all different shapes and sizes, imagine if you blacked out and covered half the picture, you would be depriving people of its true beauty! That is YOU, a thousand shapes and colors and sizes and when you let the light shine into all of them you are a stunning piece of art worthy of affection and love and don’t deprive the world of your unique beauty!
So today is makeup free Monday in my house and I am stepping out and sharing my bare skin, no mascara, no mask…just me because anxiety and depression are some of my jagged pieces but I’m taking back the power and shining the light on them and honestly, when I started this “weight loss journey” I never would have imagined the biggest transformation would be in my mind… I don’t hate my reflection, I actually am pretty proud of who I am and even what I look like, and those are words I NEVER thought I would speak, let alone without makeup on 😉 So don’t let the world break you down and tell you how to look and feel, own your pain, your struggles and your demons because they are part of your story, they are part of you, and you are enough, you are amazing, and you deserve your very best life…don’t waste this short time we have hiding who you are, step into the light and be unapologetically YOU, life is too short to live it trying to meet someone else’s standards. Don’t waste your precious time, spend it learning to love yourself for all that you are and go after all that you want for yourself because you can be and do anything when you are wholeheartedly yourself ❤❤❤❤

Recipe for Blueberry Delight:
*1 scoop vegan strawberry superfoods
*ice
*2 tbsp unsweetened almond milk
*3/4 cup water
*tons of frozen spinach
*about 12 blueberries

*Blend and devour!
